Broccoli Bites with Gingery Miso Peanut Sauce
Ingredients
Makes a little more than 2 cups
1 large clove of garlic, pressed, or 1 TBSP garlic paste
1 2-inch knob of fresh ginger, peeled and zested or 1 TBSP ginger paste
½ cup natural peanut butter
¼ cup white miso paste
¼ cup soy sauce
¼ cup fresh lime juice
1 TBSP apple cider vinegar
2 tsp chili paste – I like Thai Kitchen's Roosted Red Chili Paste
1 TBSP toasted sesame oil
¼ - ½ cup hot water to thin the sauce
Directions
l. Place all the ingredients except for the water in the bowl of your food processor and blend for 1-2 minutes. pour the water in through the top until it reaches a consistency you like. You can also place all ingredients in a metal bowl and use a whisk to incorporate all of the ingredients.
2. Taste and adjust the flavors as needed. You may want it saltier, sweeter, spicier, etc. Once you're happy with it store in a glass container with an airtight lid, refrigerated.. Make ahead of time if possible, the flavors only improve with time.
Serve with lightly steamed broccoli florets for a tasty snack or appetizer.
This sauce is also a great companion to chicken, tofu, fish, shrimp, stir fry or soba noodles.
